This study used the concentration of complete amino acids from protease hydrolyed soybean as an indicator of the extraction process. Extraction solvent and its concentration, extraction time, solid-liquid ratio, extraction temperature, etc. were optimized and orthogonal experiments were performed to further examine the comprehensive effects of the factors.
